We work with a short list of 16- to 20-guest yachts and catamarans, the sort of ships where the captain knows your name by the second morning. Cabins are en-suite with sea views, cuisine is Ecuadorian with an emphasis on local seafood, and daily programmes are designed around wildlife activity, not schedules.
